Welcome to the first installment of the comfort food series here at The Simple Life of a Complex Pastor’s Wife! A lot of these foods are definite, well-known comfort foods. Some are things that I grew up eating and are what I think of when I want warm and cozy meals.

You may be thinking, “I get that, but WHY taco pizza?”

Well, because my mom used to make this easy taco pizza for me. It’s delicious and simple and reminds of me hanging out with her.

See? Comforting. Childhood memories usually inspire feelings of comfort and safety.

Don’t worry, I’ll be covering “real” comfort foods like chicken pot pie, lasagna, macaroni and cheese, and more in the future as well.

This easy taco pizza recipe is a simple and delicious meal to make for your family, and it gives you a fun and yummy alternative to plain tacos.

Get the kids involved, and let them help you make this. Depending on their ages, they could crack the egg and mix the batter for the cornbread crust, spread the refried beans on top of the crust after it’s baked, sprinkle the cheese on top of the taco meat, and add the toppings at the end. They’ll be so proud that they helped with dinner, and you will have created memories to last a lifetime.

I use a 12×17 inch pan, covered in aluminum foil and sprayed with cooking spray, to make mine. Make sure to not spread the cornbread batter all the way to the edges of the pan, or it will be more difficult to cut and remove the pieces when it’s all finished.

Take the crust out of the oven when just barely brown around the edges and the center is set. Spread the refried beans on top, carefully because the warm crust will tear, and then spread the taco meat evenly on top of the beans.

Liberally cover with cheese. Because really, who doesn’t want more cheese?! Then bake until the cheese is melted.

This makes 8 good sized squares for me. Depending on the size of your baking sheet, and how large you want to cut your squares, yours may vary.

If you can’t find Jiffy mixes in your grocery store, use the recipe on your corn meal container. You may not need the entire amount. Jiffy mixes seem to make less than a regular recipe. So bake yourself a few corn muffins while you’re at it.
