Amanda from I Am Baker has been one of my favorite bloggers for a couple of years now. Amanda is a mother of 5 living in Minnesota. She’s amazingly talented and self-taught, which makes it even more awesome. Remember when the rosette trend began? She’s the creator of the design.

Plus, she’s so down to earth and just hilarious! Her Tuesday morning Facebook lives were the highlight of my week. I would always rush home to watch, no matter what I was out doing. Sadly, she stopped doing them on her main Facebook page and only does them for her paid subscription VIP group so I don’t get to see them anymore. But I totally don’t begrudge her for charging. She’s an incredible baker. She should definitely be making money for her talents.

So when I decided that I just HAD to have some banana muffins last week and came across her easy, one bowl banana muffin recipe, I knew I had to try it. Plus, it only uses one bowl. How could I go wrong?

One Bowl Banana Muffin Recipe? Yes please!

We always have bananas in the freezer for just this sort of occasion. The peels look black and gross when they freeze, but they’re just as delicious as the day they were frozen.

Mash those babies up! And then add all the ingredients (according to recipe directions) and stir until just combined. Don’t overdo it, or they won’t be as soft.

You can add nuts if you want, which would be delicious. I added mini chocolate chips to mine because, chocolate.

Fill the muffin papers in the muffin tins about 2/3 of the way full. Bake until the edges are slightly brown and the tops no longer look wet. I had to bake mine a bit longer than her directions stated, but all ovens are different. Just be careful not to over bake them. No one likes a burned bottom…

If you have the self-control to wait (unlike me), let them cool a bit before you eat them. I personally like to put butter on mine when they’re warm so it’s all melty. But they’re also very tasty at room temperature.

These were so good! I overthought the size of the bananas and added one too many, but they were still yummy. And definitely satisfied my banana muffin craving.

They would also be a wonderful baked good to take as a gift for someone, like a mom with a new baby or in a baked goods gift basket.
